These have been in place since the very first day we opened in March 2006. Our drinking cups are made from PLA, a biodegradable material derived from renewable resources, 100% U.S. PackagingĪll our cups, utensils, and take-out containers are made from compostable or renewable resources. And our tables and stools are all from salvaged wood - one location's tables are older than our country (450 years!) and guests at our original location eat on an old basketball court. Our countertops are locally made from a combination of recycled brown beer bottles, green wine bottles, white porcelain, and shiny mirrors. Our restaurants all use energy-efficient LED lighting. We prioritized sustainability even before the first salad was ever sold. That means a variety of efforts on our part. For us, it's all about leaving the world healthier than when we found it.
